Walnut Pesto
A quick sauce for pasta, but it can also be spread over goat cheese on a crouton as an easy hors d'oeuvre. Ingredients1 cup walnuts, toasted 2 cloves garlic, cleaned 1 handful fresh basil 1 handful fresh flat-leaf parsley 1 pinch dried chili flakes 1/3 cup Olinda Ridge extra virgin olive oiljuice of one lemon salt and fresh ground black pepper, to taste PreparationPlace all ingredients except for the oil and lemon in the bowl of a food processor. Pulse several times until ingredients are crumbly. Add the oil in a steady stream and then the lemon juice. Taste and adjust seasoning. Will keep several days in the refrigerator. |
