Pasta Pomodori ed Olive
The strong flavors of the olives and sun-dried tomatoes add variety to a classic sauce. Ingredients1/2 cup oil Olinda Ridge California-cured black olives, chopped or whole 1/2 cup sun-dried tomatoes, chopped 3 cloves garlic, chopped 4+ tablespoons to taste Olinda Ridge Estate Organic extra virgin olive oil 1/2 cup chicken broth 1lb penne pasta salt and pepper to taste parmesan cheese PreparationCook pasta according to package directions. In a pan large enough to hold pasta, sauté chopped garlic in 3 tablespoons olive oil for 1 minute. Add sun-dried tomatoes, olives and chicken broth and cook at medium heat for another 5 minutes or so. Add cooked penne pasta, toss well over medium heat for another minute or so, drizzle with an additional 1 to 2 tablespoons olive oil. Serve immediately with parmesan cheese. Serves 4-6 |
