Sweet Olive Oil Quick Bread

Olinda Ridge Late Harvest Gold olive oil is a tasty substitute for butter in this bread recipe.

Ingredients
2 1/2 cups flour
1 pinch of salt
2 eggs, lightly beaten
1/2 cup Olinda Ridge Late Harvest Gold extra virgin olive oil
grated zest of one lemon
2 teaspoons baking powder
1 cup sugar
3/4 cup milk
1/2 cup yellow raisins
1/4 cup pine nuts

Preparation
Preheat oven to 350 degrees. Mix flour, baking powder, salt, sugar, eggs, milk and Late Harvest Gold extra virgin olive oil. Add raisins and zest. Pour batter into buttered and floured loaf pan. Sprinkle with pine nuts. Bake for 55 minutes.
