Mesclun and Tuna Salad
This is an easily made dish perfect for lunch. The Olinda Ridge Master Blend olive oil enhances the flavor of the tuna.
Ingredients3 handfuls mesclun salad
1 can solid white albacore tuna, in water
1 small vine-ripened tomato, chopped in 8 pieces
2 tablespoons
Olinda Ridge Master Blend extra virgin olive oil
1 tablespoon red wine vinegar
salt and fresh ground black pepper, to taste
optional: red onion, carrots, olives, capers to taste
PreparationDrain the can of tuna. Place it in a large salad bowl with the mesclun salad, chopped tomatoes and any other optional ingredients desired.
To make the vinaigrette, place the Olinda Ridge Master Blend extra virgin olive oil, red wine vinegar, salt and pepper in a tiny bowl and whisk with a fork. Add to the ingredients in the salad bowl, and mix together.
